- It's a delicious meal that warms and softens your body and mind even when you don't have an appetite. It's delicious even if you eat it with rice instead of ramen, or just eat it as soup.
Ingredient :
1. Eggs
2. Extra Soft tofu
3. Ramen
4. Crab meat
5. Enoki mushrooms
6. Spring onion
7. Fish sauce, Soy sauce for broth and minced garlic

A meal with all my favorite things-- crab, mushrooms, scallions, soft tofu, egg, and ramen! I think I could eat this for breakfast and dinner every night and not get tired of it. I might have to start wearing pants with elastic waistbands, though ^w^;

Could be lovely with some hot chili oil and miso paste, too. Maybe ham, pork belly made in advance, or even freshwater eel in place of the crab meat for some variation!

I went out and bought eggs, spring onions and tofu because of this video! Probably not going to make it with crab meat, maybe imitation crab though. My local grocery store doesn’t sell Enoki mushrooms either.

I do not like imitation crab, but I think it would be delicious with clams. The soft tofu is perfect for mornings, as are the soft eggs. I don’t know which is better - noodles or rice. That’s the forever debate, isn’t it?
If you twist the krab it will separate much easier... almost falls apart.

I made this for my family last night for dinner and everyone loved it. Even my small kids and picky eaters, aged 2 and 4. I was surprised how much flavor the broth had from only soy sauce, fish sauce, and garlic. I also added a dash of sesame oil and fresh shiitake mushrooms.
I'm impressed by the simplicity of that broth too.
