If you are Fresher , go for SAP End User for which no training required , once you will get hired company will give you training as per your profile

Every employer is looking End To End Implementation knowledge . you may use your training Blueprint . configure all Business Process , Prepare Test Script . Once you will do all this even if in Sand box you will gain confidence
Will company disclose the client details with third party when they do BGC ?
If you were there on that Project they will disclose . Anyway that Project is completed and it is updated in SAP databae too

There is no jobs available for Freshers in SAP . you may start your SAP career as SAP Business User. Once you have experience and exposure you may upgrade to SAP consulting

Which is one best S/4HANA vs. R/3
R3 is old technology where as S4 HANA is new and latest technology. So in IT always latest one most updated and having more solutions towards Business Process. Job point of view also S4 HANA is better as its new technology
