How to make SUPER EASY Artisan Bread & Pita Bread

  • I have been making this bread for about 6 years and love it! I have made mini bread rolls, pita breads, slice bread, sweet bread, cinnamon bread, all kinds of breads using this exact recipe. Super easy. Oven needs to be at 450 degrees and I like my bread crunchy so I will bake it for 35-40 min. Sometimes I like it soft so I bake if for 30-32. All depends on how you like your bread.
    All you need is:
    3 cups of warm water
    6.5 cups of flour, I use 3 cups of whole wheat and 3.5 of white.
    1.5 T of yeast
    1 t salt
    Regarding my bread stone, I bought it at Williams & Sonoma for $30 5 years ago. You do not need a bread stone to make this.
    I got this recipe from the book 5 min artisan bread. Checked it out from my library.

    I'm 65 and other than homemade biscuits I have never made bread. But, today I'm encouraged to give this a try. I love Pitas and my husband loves crusty Italian (and French) breads. Out of all the bread shows I've watched, this recipe seems easiest. So, thank you for taking the time to post it.

    I made the pita bread and it was SO soft and SO good! I made mine fairly thick and it stayed soft for days and out of the freezer. I was able to use it just like (store bought) pita bread. holds together well. thank you! xo

    Thank you for making this video about the bread. Definitely got to try it. I'm going to try to do it though with whole wheat flour only and see how it turns out. I might have to add a little baking soda to get it to lift. Your sandwich looks excellent though and so does your loaf of bread no matter what shape it is. 😎

    I did for the first time and the bread came great. I added 1 cup more of water, the mix came very wet but when i cook the bread was moist. Exactly the way I wanted. Very easy metod. I did the mix night before and in the morning I cook immediately, when was still cold.

    A great job!!! One could also place a pan of water on bottom of oven and spray some water on dough. This will make the crust even better. Let dough rest another 45 minutes before placing it in oven. Patrick Raffelo artist

      Well, actually, the longer the dough rises, the better it can be digested. The bacteria can develop well. I sometimes make bread by using very little yeast. I let the dough rise for 1 hour at room temperature and then put it in the fridge overnight. In the morning it is ready for breakfast rolls.

    The original recipe says after you cloak the dough, you let it rise again for about 30-45 minutes, then you bake. This will let the loaf expand and have lots of space in the crumbs. Also add a container with water to make a harder crust. Great Video!

    Mate one last week and it was awful very heavy. Came across your one last more so did it this morning, went out, came back at lunch time and it was ready. Popped it into the oven and no water was nice and crusty. Only thing ... I used 6 cups instead of 6.5 .... but was still fine thank u so much 😊😉

    Yes, wooden spoons work but what you used is called a rubber spatula.
    Also, I Don't add the salt to the yeast mixture as it will stop the rise of the dough. I add the salt to the flour and whisk it together. THEN I add the yeast to the flour-salt mix.
    At that point, I would follow your steps.

    Just wondering. Is that correct: 2.5 Tablespoons of yeast or is it supposed to be 2.5 Teaspoons of yeast. I am just a beginner and not implying anything I just wanted to make sure. My bread machine bread is 4.25 cups and calls for 1.5 Teaspoons of yeast.

    Great video :) I love make Pitas :) Actually like you. I mix both Wheat & All Purpose flour place them on 11" Pan the only difference I put cover it seems keeps the moist anytime might need to reheat them. I wish more people getting in to it and your Video inspire. It's so HEALTHY than the commercial Breads!!!

    I love your recipes and your style. I just made the dough. Can I put the dough in freezer until I am ready to cook it? There is only 2 of us so we wont eat that much. I can't wait to see what it looks like!

      I have never frozen dough. I usually stick it in the fridge. It is good for about a week. So glad you are enjoying it!

    So no hot water in the oven? So no leaving it for 45 min to rise? The other baker posted 8 cups of flour, 1 cup of water. Didn't sound right. So she did the hot water and keft it out 45 mins. Between her recipe and yours, I think my bread would be very good! Thanks so much for your video. I had never baked so much in my life. Thanks to quarentine!

    I’m reading now that salt, added to yeast, actually kills it. Since you’ve made this for so long, you have better luck with it. That pita looks awesome.

    great job of a video! If I maintain about 6 cups of starter at all times and make 2 bakings a week requiring 2 cups of batter for each loaf why do I have discard starter, why can't I just keed it weekly and use it.

    Should you put the baked bread in the fridge if you're not going to eat it all the next day. I made another recipe & the bread came out fine but the next day, it was dry. Any tips?

      I would put in a plastic bag and leave it out, don't put it in the fridge it make condense and pull out the water. But those kind of bread doesn't stay fresh for long.

    Hi I live in Singapore and it's really humid here so I was wondering if the proofing time would vary from each country because the weather conditions would be vastly different.

      that is correct, Humidity and Temperature will have an effect in the rise of the bread.

    first...love you videos! in regards to your bread recipes, have you ever made a veggie potpie? my hubby has an awesome chili recipe and I was thinking how yummy it would be in a potpie(used to love chicken potpies back in the day). but....would you use this recipe or the one for the pretzels for a potpie? and, how long would you bake it? any thoughts?

    I am just starting my oil free plant based diet and love your channel.... My question is, is there any chance you could do a food haul from Costco?? I never knew they had the organic flour and also saw that you use the balsamic vinegar from there. Just wondering what other products you find from there that I might be missing.

    Can the pita bread be done in a stainless steel pan like an all clad or should I use a non stick? Though you’re not suppose to heat a nonstick pan on high ....

    Is a bread stone like a wood pizza paddle?

      No, a pizza paddle is a wooden paddle that is used to slide the pizza in and out of the oven. You can use an upside down pan in the place of a pizza paddle. A bread stone is a "stone" that is quite heavy that helps radiate heat and gives the bread a nice crust. I have used pans and stones and the bread is as good on both. There are several different types of bread "stones" some are brick like and some can even be a large piece of metal. The list goes on and on. Hope that helps:)

      Absolutely. I have not made a white bread in years! I just use whole wheat. You may need to add more water.

      Mrssea Sea - late reply but there are plenty of natural sugars in wheat. French bread- the real stuff- is never made with sugar. Most Italian breads too. The secret to good flavor is a long rise at a fairly cool temperature- 70F or so. So don’t try to hurry the process with heat. Plus a long rise will give the bread better keeping quality without that stale taste.

    Does it still come out good if you cook the bread in a Dutch oven. Also I added a little butter and it doesn't look like it has all the holes - it just looks like regular dough.

    you are supposed to let the yeast salt and water rest for a couple a minutes so the yeast activates

      Yes you can half the recipe. No difference in time.
