The roux will kinda look like moist sand when its combined, cook the raw flour flavor out -like a minute or so, add liquid while stirring and you got it! I used to have such a problem with them but it just takes practice :) The recipe I follow calls for 4T butter, 2T flour, and 3c liquid (I use 2c milk, 1c heavy cream)
The pasty flour is called a roux and that’s exactly how it’s supposed to look. Not a fail :)
