The Greek 🇬🇷 8 green bell peppers, (1 kilo) 2-3 tablespoon(s) olive oil 1 pinch granulated sugar salt pepper For the filling 250 g basmati rice 3-4 tablespoon(s) olive oil 1 teaspoon(s) oregano, dried 2 spring onions 400 g water, hot 350 g tomato juice 2 tablespoon(s) parsley, fresh 1 tablespoon(s) mint, fresh salt pepper To serve. olive oil pepper, freshly ground oregano leaves feta cheese bread, slices😊
For the peppers Preheat the oven to 220°C (430°F) set to fan. Use a serrated knife to cut off the top of each pepper, in order to get a “lid” 1 cm in thickness, from the side where the stem is. Remove the seeds and transfer the peppers to a 27 cm round baking pan. Drizzle the peppers -both inside and out- with olive oil, and then sprinkle them with salt, pepper, and sugar. Put the pan in the oven and bake the peppers for 20 minutes. Remove the pan from the oven and set it aside. For the filling Put the rice, olive oil, salt, pepper, and oregano into a large bowl, and mix them well. Finely chop the spring onions, add the white part and most of the green part into the bowl, and reserve a little of the green part for later. Add the water and the tomato juice, and mix well. Cover the bowl with plastic wrap and microwave it for 15 minutes at 800 Watts. Remove the bowl from the microwave and break up the rice with a spoon. Finely chop the parsley and the mint, and add them to the bowl. Add the spring onion you reserved previously, and mix the filling well. To assemble Leave the oven on at 220°C (430°F) set to fan. Stuff the peppers with the filling and cover them with the top “lids”. Put the tomato juice, olive oil, salt, pepper, and sugar into a bowl, mix them well, and pour the sauce over the peppers. Put the pan in the oven and bake the stuffed peppers for 5-10 minutes. Remove the pan from the oven, divide the peppers into plates, drizzle with olive oil, and sprinkle with pepper. Serve with fresh oregano leaves, feta cheese, and bread slices.
