Old Fashioned Clover Leaf Rolls | Bread| Restless Chipotle

  • Old fashioned cloverleaf rolls are some of my family's favorite dinner rolls. They're light and fluffy, buttery, and slightly sweet plus you can pull them apart so that there are more inside edges to hold all of that melting butter. They're perfect for Thanksgiving, Christmas, Sunday dinner or anytime you want to make someone feel special! AND they freeze well!

    Ingredients
    2 packages yeast
    ½ cup warm water
    1 teaspoon sugar
    1 ½ cups warm milk (110F)
    ½ cup sugar
    1 egg, , room temperature
    ½ cup butter, melted - divided use
    2 teaspoons salt
    5 ½ cups all-purpose flour
    Instructions
    In a bowl dissolve the yeast in the warm water with 1 teaspoon of sugar.
    Set aside for 5 minutes and allow to foam up.
    Beat in milk, ½ cup sugar, & egg.
    Add 1/2 cup of the flour and beat.
    Add ¼ cup of the butter and salt.
    Add 1 1/2 cups of flour and beat until smooth.
    Stir in enough remaining flour to form a soft dough.
    Turn onto a floured surface and knead until smooth about 6-8 minutes (or knead in your stand mixer according to manufacturer's instructions)
    Put the dough in a greased bowl. grease the top and cover it.
    Allow to rise in a warm spot for about an hour, or until doubled.
    Punch dough down.
    Roll into 72 equal sized balls.
    Dip the balls in the remaining melted butter and place three in eacg greased muffin cup.
    Cover and let rise until doubled, about 30-45 minutes.
    Bake at 375 degrees for 12-15 minutes or until golden brown.
    Brush with melted butter.
    Serve with butter or honey butter.
    *Note: The number of rolls will depend on the actual size of the muffin cups. You want them to fill the muffin cups halfway.

    So glad that your video showed up in the listings. These rolls looks so pretty I am looking forward to trying them. I thought what a neat name for your channel and then realized that it is your fruitcake recipe that I have been using for the last 3 years and everybody loves it. Thank you for that too!     The jar says: 2 1/4 tsp.equal one 1/4 oz. yeast packet.
    Thank you so much for sharing. I have been looking for the recipe for years, but when we were growing up we called them Butterfly Rolls.

      Whatever you call them they are so good. When I was baking 6 to 8 loaves of bread a week for my family I found it easier to round to tablespoons and it didn't affect my finished bread so that's why I use tablespoons.

    New sub! I think these are the same rolls I had at an Amish restaurant we visited 😊 I’ve been searching for the recipe and I hope this is it! I will try them😊 they served them with a strawberry butter 🧈

    I've tried out a few of these recipes. I'm not sure if you mentioned the temp. You probably did but I missed it. I know one I tried said 450 for about 13-15 min. and another 350 for 20-22 min.
    Also, when you freeze what them should you put on to heat them up and for how long? Thank you!

    I watched your You Tube tutorial, and you say to add 5 cups of flour. Your written instructions say 5.5 cups of flour. Which do you recommend please? First time making these rolls for Thanksgiving.

      The flour. measurement in yeast doughs is never exact. You'll need between 5-6 cups to get the soft dough you're looking for. Start with 1-1/2 cups and add flour until you get a soft dough like in the video..

    2 pkgs of yeast is 41/2 t , that is a lot of yeast. is that correct?

      Aye, there is 2 1/4 tsp per packet of yeast or 7 grams. And that amount of yeast is right on. Two packets are good for 4 to 8 cups flour.

    I wanted to let you know what I experienced on my second batch of these rolls. Well I had to use bread flour and they did NOT turn out right at all. So bad that I had to throw them out. They would not rise and they were very salty. Something I did wrong, all on my own, is that I over proofed the yeast before adding it with milk and flour mixture. Thus explaining why they didn’t rise.
    But now I’m doing them again. I would send a picture of my lovely dough, but I can’t figure it out.

      I'm sorry they messed up on the second batch! If they didn't rise and they were salty I'd say you added too much salt. Salt inhibits the growth of the yeast. Hope this new batch works out.

      Your rolls will not come out right, they will be tuff if you don’t follow the directions specifically and you need the tricks to help you, smh

    Gee. Wish i had your mixer.
    Just in middle doing thus PROCESS. Had only reg mixer. Doe pulled my old beater ( one) outa the mixer itself. What disaster!! Had finish adding rest doe by had . it was HORRIBLE!!
    Show us how the oldays DID it with out a mixer any KIND??? PLEASE????💜💜 hope these turn out. You made look so darn easy!! Lol

    Kneading machine chippy is too huge for little quantity. ...manual demo will be easy l feel ...l am your octogenarian grannywith 53 years of cooking exp..... l am happy ab your efforts

    A packet is 2.25 tsp. A tablespoon is 3 tsp, so two TBS is 1.75 TSP more than two packets.

      Yes I know. But it works either way - and it's easier for me to remember 1 tablespoon per packet when I'm using bulk yeast. Measure however you want to.

      The way I learned in school was a TBS had 3 TSP and 3 TBS was a 1/4 cup. I believe that is the way it was. I was not a Home Economics person. My BA is in history and in HS I was a jock that graduated with honors. But, you can say I was stupid because it took me 10 years and a war to get my BA.

My first two years were on different lists, but I grew up at Parris Island. My big sheepskin hangs behind me on my office wall and not the little 8.5 by 11 they give out today. Hope your sons get their degrees, both of my girls got their degrees, both with honors. The oldest, mana cum laude. My youngest would have also, but her woke professor kept her from it. She now is the head of public relations for a large school system.

      In the old days they didnt have stand mixers ,but beat that dough with a wooden spoon ! Keep beating till you see some air bubbles ,then cover and let rise for the first time covered with a couple of kitchen towels

    I just finished viewing a recipe before this and it was very simple. This process is too way too long and drawn out. I guess it's all about the viewing time.
