Chef John's use of speech techniques is on par with his culinary skill. He is a master of inflection and pause, while his ability to tweak humor is the perfect spice.
thats funny, I was looking through the comments because I found it really grating. He always seems seems to go up a couple of notes then down one at the end of his sentences so everything he says seems like it has the same weight, like a robot would talk.

Is it wrong that I judge a lot of places I eat for the 1st time by their burgers if they serve them? I'm of the mind if they can make a decent burger then I have hopes for everything else. If the burger is just a frozen patty well then I'm a bit more skeptical of what else might not be fresh.
All these burgers make me want to eat @chef john's restaurant if he ever opens one up!

I cook a lot. I watch many videos by a plethora of people for inspiration. Chef John's videos are not only entertaining but through him I can fake that I am a wizard in the kitchen now and then. I return over and over to his videos. He's part of my You Tube University course. His homemade 'Ritz" crackers are simply a cheese heaven cookie. Now make your own ricotta for that cracker since Chef John taught us how easy that is and top it with whatever you love. Yes, he inspires me.

in (MA, USA) we have a city named worcester, which we pronounce "wiss-tah" or "wiss-ter". so we pronounce the sauce similarly, "wiss-tah-sheah"
as a southern American, "worshter" is how we've always done it lol

I know some folks dismiss burgers as 'junk food' but, as part of a balanced diet, a burger in a bun is simply a variety of beef sandwich with salad. Living on a Macdonald's diet is something else - but these looked wholesome and nourishing.

Man I been so busy lately, but I sure miss these videos. So relaxing to listen to after long days at work.
I love Loco Moco! A lot of places try to fill you up with extra rice, but really it should be balanced. Also, eat it how "you" want! If you want it sliced and eaten that way, or chopped, mixed and eaten with a spoon, go for it! Chopped and mixed was how the gentleman who taught this recipe to me used to like his. His wife liked her's traditional.
I think I’m more impressed by how juicy, red, and delicious those tomatoes on the first video look than the burgers themselves.
"You are after all the Coco of your Loco Moco." That is funny to us because we have a little bird called Coco. He is a yellow budgie, and he acts pretty loco sometimes, running back and forth on his perch, bobbing his head up and down, and squawking loudly. Our other bird, Bobo, is a blue female and she just sits there looking at him like he is loco. :-)

against his advice i looked up what "moco" means. after doing that i agree with him. don't do it.
You want to do a dual zone method, which you can even in a kamado style grill, which it looks like you are using there. you put coals side of your grill (direct cooking) , or use a heat deflector, and a drip pan on the other side with a little bit of water (indirect cooking) . The direct cooking side is for searing and fast cooking, while the indirect side is used for slower cooking.
Ha ha, I love how native English speakers suffer with pronunciation of their own words like Worcester(shire) sauce.
As a native English speaker, in all seriousness.....is that how I am supposed to pronounce it?? 🙈🤣

The best way to mix ground meat for meatloaf, burgers or meatballs is to use a stand mixer. Put all your ingredients in the bowl and mix for 1 minute on low. Everything will be welk-cinbined and not over-handled.or tough.

Chef John, im fairly certain youve saved someones fingers! Very great advice on the proper use of a knife or cleaver. I for one appreciate it!
The meatloaf burger is the one I'll be making soonest. But it needs the addition of 1 teaspoon ground mustard. And while adding bacon to the ground beef is always a winner, because adding bacon is always a winner, for the best meatloaf you should use a mix of ground beef, ground pork, and ground lamb. And then of course you still add the bacon, because again you can't go wrong adding bacon.
Is it just me, or did I hear that Chef John was going off-line for a week or so??

I just made the bleu cheese one, though I used pre-ground beef. Legitimately, it had one of the best crusts that I've ever enjoyed on a beef dish.

"Worster" sauce is the authentic British pronounciation. Just like the city of Leicester is known as "Lester"
In Massachusetts, the city of Worcester is pronounced "Worster". So adding "-shire" to the end makes it pronounced "worstershire."
Wouldn't that then make it pronounced "worster-sher sauce"
@@beclops In the UK we pronounce it Worcester sauce, the -shire bit is silent. It is an oddity that is only used for the sauce, the county is still pronounced Worcestershire.

@@beclops M&S is a kind of shop for the conservative middle classes. They mainly sell food and clothing. Their food is decent if over priced and their clothes are bland and boring for the most part tailored to the middle class and middle aged. Recently they tried to drop this image but is was a disastrous failure which ended with them putting off the middle aged middle class shopper that they were popular with while at the same time totally failing to attract a younger demographic.
I only see 4 burger recipes and one bun recipe. Am I supposed to believe a meatless bun is a burger?

Personally I like a little mustard, parsley and roasted onions in my patty mix. The Potatoe chips also give a great crunch to a Döner or kebab sandwich with Tsatsiki. Wouldn't the "Moco" (ha, translates to booger, love it;o) My dad's from eastern Germany where dishes had names like Dead grandma and Cold snout) go well with a little chimichurry, pesto or Zhoug? And if you like your sunny side up crispy with a gooey yolk but no slimy eggwhite (and don't care for flipping them or frying them with a lid on) helps skimming off the latter with the backside of a butter knife.^^
Lastly aren't the Hamburger Buns missing the aforementioned sweet potatoes?
