The Pies of March: Muffin Pies With Vodka Crust

Single batch, two nine inch crust recipe:
2 Cups all purpose flour
1/3 Cup butter
1/3 Cup lard
1/4 Cup ice water (approx.)
1/4 Cup vodka, chilled overnight in freezer
1/2 tsp. salt
Chill all ingredients thoroughly. Cut butter and lard into flour and salt. Make a well in the flour, add vodka and half of the water and mix with your hands. Add remaining water a little at a time until you can form a ball of dough. Wrap in plastic and rest in refrigerator 15 minutes. Cut ball in half, roll out part way, wrap in plastic and rest in refrigerator another 15 minutes. Roll dough out to size, keeping as cool as possible.

Thanks Mudbrooker for the vodka tip. This pie crust recipe makes sense , because the lard makes it flakey and the butter gives it flavor. Definitely will be making some pies soon using your recipe.

Two things I did not know before this video, 1. Don’t can with cornstarch for your fillings 2. Why do people use vodka in pie crusts.

Hello Mudbrooker, I had to share with you a comment I posted to my Facebook about your Wagner video from a couple of years ago: Cast iron collectors like this guy that actually use their pans to cook are awesome. He also has a vintage wood burning stove which the cast iron pans were designed to fit into. I had to force myself to stop collecting at "just" 20 pieces which includes 15 skillets, two chicken fryers, two griddles, and my new popover pan, which was very expensive because it is a hard to find piece that is around 100 years old. Only my Griswold popover pan, and one of my Wagner skillets are considered valuable. But my favorite two pans were from an unmarked foundry. I got both of them for $15 total. I found out through another website that one is from an old Chicago foundry and most likely from the WW1 era, because the iron on that pan is very thin, which would indicate there was a shortage of iron due to the war effort. We took foundry class at Baltimore Polytechnic Institute as part of the regular curriculum. It is a very difficult and dangerous skill to master.
I love to bake in cast iron. Will have to try making in my muffin or cornbread pans.

Never heard of the vodka trick; I typically use vinegar in my crust but I don't think it's for the same reasoning. Those 'tarts' are lovely! Love the variety you had.
Loved all of the different cast iron pans, making great individual servings and pretty shapes. Good idea of keeping extra dough in the fridge while working with the first ones. Nice variety of fruit, something for everyone! Thank you for sharing your recipes!
I have a large family, and when I make pies, it's hard to please everyone. This is a great solution! I can fill some with fruit and blind bake crusts for other fillings!

I had to laugh at your pastry cutter. Mine goes all catywhompus too when I use it, but I bend it back and use it again! I've heard of using vodka in crust but have never tried it. Next time I make pies, I will give it a go. Love the individual pies. Each person can have their favorite flavor and make everyone happy at once, great idea!
