Great video and the steaks looked very tasty, but let me give you some pro-tips. I've been cooking steaks with the cast iron skillet for many years and have learned several key points. 1) when searing steaks at a high heat, use an oil that has a higher smoke point. Extra virgin olive oil starts to break down from 325 - 375 degrees F, that will give you a bitter taste you don't want. I'm assuming you're searing at a higher temp than 375, so I would suggest using something like grape seed or vegetable oil, I've also used bacon grease. 2) on the oven temp, I use a lower heat at 350 degrees, by cooking at a lower temp, the steak's doneness is more evenly distributed, wall-to-wall medium rare with a great crust from the sear! 3) Last tip, don't throw away that yummy goodness that's left in the skillet, pick out the used rosemary, thyme and garlic and toss in the trash, and then use the rest of what's in the pan to sauté some mushrooms, even add some asparagus, cook over medium heat until almost done, the last minute add some minced garlic, reduce heat to medium-low (let the skillet cool down for a minute or two) and add some heavy whipping cream, allow the cream to reduce down to almost a glaze, then plate with the perfectly cooked steaks!

But let preface this by saying that we thought about having a very expensive restaurant make it on Xmas even and have it the next day. So basically we're paying super high dollar for reheating 1 day early steaks. Then I thought about it and said , damn , are we going to spend $150.00 to stick 2 steaks in the fridge and reheat . Decided I'm gonna do this. It was the best steak I have ever cooked in my life and my wife was also as happy with hers. Very very glad you used cast iron. I’ve seen many UA-cam chefs using non stick pans. People don’t realize how good food can be when it’s cooked on some well seasoned iron.

Splurged (paid $34 for 2 -cheaper than eating out, tho) on two locally raised, thick (like yours, about 1 1/2”) filets, and followed your instructions to to “T.” OMG -they were absolutely delicious! I made these tonight and I think they were excellent! Perfectly done (for once) and well seasoned. If I had any red wine on hand I probably would have tried to make a pan sauce but quite frankly they were perfectly delicious without it. Thank you for this video!

I did everything you advised but the oven. Just wasn’t willing to have the heat of it compete with the AC. Instead I covered the pan and let it cook that way for a few minutes…then let them rest..as you advised.. Med-Rare. Delish! Thanks Jason.

@@JasonBolte not saying i use to ruin them lol , the worst that can happen is that its a little over cook to my taste lol .. these were a little undercook , but still very tasty and tender. I was learning the process so .. ofc a video can help you but you need to do it yourself a couple time to master it. Great easy and tasty way to do it !
Nice job good crust. One thing. I would seat on both sides till 90 degrees or so then turn the heat to low and then add the garlic rosemary and butter then baste for a very nice medium rare.
Looks good, but I always sear the edges. Also, when you put it in the oven, a small grill on the bottom of the pan will prevent the cast iron from overcooking one side.
Turned out great. Stove temperature isn't mentioned so I did medium heat. I also seasoned and briefly seared the sides using tongs. I did 3-4 minutes in the oven and mine came out medium/medium rare. Melted in my mouth and could cut it with a spoon.

@@---gm6de I read it and youre wrong , you season it all over , if what you say is true then you dont have to season it at all , just season after cooked . You season it all over first.
Yes! Season the sides with S&P as well, after the second side cooks for 2 mins, reflip back to the original side for about 30 seconds, so that the butter can absorb into the other side and when out of the oven, cook each of the 4 sides for about 5-10 seconds to get a nice crisp all over :-) :-)
WolfPack FanForEver I’d suggest 3 - 4 minutes. To be one the safe side, I’d check it at 3 minutes. You can always cook it longer but you can’t “uncook” it if you cook it too long.

Looks great but i would roll them on their sides at the start or before you added the butter to get a better sear on the sides
@Monica Jones you flip the steaks to their sides, and push them up to the side of the pan. This will allow them to sear and get a very nice crust

I was learning the process so .. ofc a video can help you but you need to do it yourself a couple time to master it. Great easy and tasty way to do it !

Nice job good crust. One thing. I would seat on both sides till 90 degrees or so then turn the heat to low and then add the garlic rosemary and butter then baste for a very nice medium rare.
I'm definitely out ousting it un oven after, I like it red in the middle.

Looks good, but I always sear the edges. Also, when you put it in the oven, a small grill on the bottom of the pan will prevent the cast iron from overcooking one side.

Bings392 I’d go to 3 minutes per side in the pan and 4 minutes in the oven. Also make sure you filets are room temp before you put them in the pan.

Turned out great. Stove temperature isn't mentioned so I did medium heat. I also seasoned and briefly seared the sides using tongs. I did 3-4 minutes in the oven and mine came out medium/medium rare. Melted in my mouth and could cut it with a spoon.

Add some good red wine, flour and you'd have a killer sauce.
You dont ruin any quality steak with a sauce.. it kills the umami which is the entire point of eating a meat.

Yes! Season the sides with S&P as well, after the second side cooks for 2 mins, reflip back to the original side for about 30 seconds, so that the butter can absorb into the other side and when out of the oven, cook each of the 4 sides for about 5-10 seconds to get a nice crisp all over :-) :-)
How long in oven if you want more to medium??
WolfPack FanForEver I’d suggest 3 - 4 minutes. To be one the safe side, I’d check it at 3 minutes. You can always cook it longer but you can’t “uncook” it if you cook it too long.
