I buy my pork butt whole bone in from the butcher. Then I take ot to the counter and ask the butcher to cut them 1 1/2" to 2" thick. I tell him to cut the steaks with the grain. And their saw will cut thru the bone. No need to remove the bone. Bone and fat are flavor.

Oh man that's a great idea! They could easily slice through it all and get me the good sized steaks!
Great video Joe. Try smoking them, yes. That's how I do my thick pork butts. With a good sear at the end. You will love them that way.
