    They sell Sabretts and Slawsa at Publix here in Birmingham. I smoked my Brats with cherry wood and made a bacon onion jam. Was very good. Bacon Jam Recipe:
    - 8 slices Thick Cut Apple Smoked Bacon
    - 4 Medium Onions
    - ¼ cup Balsamic Vinegar
    - ¼ cup Brown Sugar
    - water as needed
    - Salt and Pepper to taste
    Directions:
    1. Peel and thinly slice the onions
    2. Cut the bacon into small cubes
    3.
    Heat a deep sauté pan over medium high heat and render the bacon until
    brown and slightly crispy. Remove from heat, drain, and reserve 1 TBS of
    drippings in the pan
    4. Add the thinly sliced onion, brown sugar, balsamic vinegar, bacon pieces, and 1 Tablespoon of water.
    5. Cover and cook the onion for 15 minutes until they start to soften.
    6.
    Remove the lid and stir the onion mixture occasionally until they
    caramelize. Add water a couple of teaspoons at a time as the moisture
    cooks off.
    7. Keep a close eye on the onions stirring as needed.
    It will take about 1 hour to cook the mixture down into a jam like
    consistency.
    8. Store in an airtight container in the refrigerator for up to a week.

    Just saw this and a 1st timer watching also. Great spin on the typical "beer brat tub" and looks every bit as moist! I have a PBC and will give this a go! Thanks Sal!

    Hey RBC- I have done brats 6 ways from Sunday but I have never thought of using oil on the skin before smoking. It's such a no-brainer- I MUST be a moron but you just earned another subscriber! Thanks for the idea as prep for my July 4th brats has begun and I will run the play this way this year!

    Those brats looked awesome... all three. When I was a kid, I would go into the city with my dad to his work and we'd get the dirty water dogs for lunch, boy were they good! Guess what I had for lunch today, that's right some Sabrett franks w/mustard & kraut. Yummy! Sabrett makes a real good mustard, and that onion sauce... anyway enjoy & keep rocking :>)

    I smoked some Italian sausage for a couple hours the other day why did they come out so dry? I thought man thats dry sausage.

      Wow. I don't know. Did you paint them with oil? The PBC gets pretty hot as much as 325 degrees. Maybe too low of a temp? These turned out wonderful! Thanks MM!!

    Great looking brats there Sal! Never thought of doing them in the smoker.. But this will be tested in my wsm.. Did you use any woodchunks in the barrel or did you just use coals?

      "brats" that makes no sense its Bratwurst so roughly translated Siered Sausage it make no sense to call it brat but just Wurst would be acceptable

      It's not just me RoeGi, bratwurst is commonly referred to as Brats here. If you look at the recommended links at the right, you will see Bratwurst referred to as "Brats " more often than not. It's just a nickname, I am sure there is no offence meant! :)
