Sushi doesn't have to contain fish. I know a lot of people think sushi = raw fish, but it doesn't. the raw fish is sashimi. Sushi is just the name of the rice dish and can contain whatever you want. You can have chicken (cooked) sushi, you can have carrots or whatever you want.

Sushi is great sure, but there's so much more to the Japanese kitchen than just Sushi, Udon, Yakitori, Ramen, Donburi, Oden, Tamagoyaki, Tonkatsu, Kashi Pan, Sukiyaki, Miso Soup, Okonomykaki, Gyoza, Takoyaki, Kaiseki Ryori, Yakisoba, Wagashi. And so much more
Italy is also much more than just pizza and pasta.
Risotto, Gnocchi, Gelato, Parma ham, Ribollita, Bagna Cauda, polenta, focaccia, Arcancini, Fiorentina, Arrosticini, Tiramisu,
and so much more.
It's not about how many dishes they have but the comparison b/w authentic and famous dishes like sushi from Japan and pizza/pasta from Italy( and ofcourse they didn't have tried all these)
