    About Master Sushi Chef Hiroyuki Terada:
    Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on UA-cam.
    At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992. Mr. Kondo is the master of Kansai style cooking, considered to be the high-end of Japanese cuisine.     The easier way to zip lock the beef is to leave just a small opening, submerge it and the water will create pressure on the bag that will push the air out trough the small opening. Right before submerging it completely, seal the bag. At least that is how I do it to remove as much air as possible. Not sure if I explained it correctly. English is not my native language.

    I am addicted to sous vide and it is pretty much the only way I cook meats anymore. The even tenderness and juiciness you get from it is second-to-none.

    Holy cow, guys! I know that many of your followers try your recipes at home. But as a retired Firefighter I would NOT recommend anyone using a torch on hot oil, especially indoors, as it could very quickly turn into a disaster!

      Shredder Nation, I’m sorry to tell you that I’ve gone on WAY too many house fires that started by someone saying, “I didn’t know THAT would happen,” to agree with you. “Accidents” are called that for a reason, and are usually caused by someone who didn’t pay attention to safe practices. Lighting hot oil on fire in the house is plain unsafe.

    thats undercooked. a steak that thick needs at least an hour-hour and a half sous vide. with the bootleg method you guys were doing it should be in there for 2 hours.

      It's purposely undercooked. Hiro stated at the beginning of the video that he wanted pink at the core. And that so-called "bootleg" method is actually the traditional way sous vide is done, you fucking idiot.

    There is WAY too much air in that bag. With the meat being surrounded by all that air, the water temp and the air temp will not be the same. And at 30 minutes, your "sous vide" process did basically nothing.

      Just the fact that it's dry aged makes it not raw, and in addition, the sous vide made sure it wasn't raw. That's just what good steak should look like is all. You're probs more used to seeing medium well as rare. This is rare.

    Every fiber of my being shrieks "you DO NOIL STEAK!!!". I know sous vide isn't boiling but I just can't get comfortable with putting a steak in hot water to cook (how did they do it without plastic bags in 1799??). It reminds of the scene in "Apocalypse Now!" where Chef was talking about the Army cooks boiling prime rib in huge barrels and coming out grey.

    I would eat a medium steak rather than medium rare - extra rare steak . My opinion , you should cut outside of the fat that surrounding the meat about 1/2 more because the reasons that you must know why, when you already saw how they dry age beef and that cut of beef is too much fat . And sous vide process need a little bit more about 60-61*C , the next problem is thyme will destroy the flavor of dry aged beef . Just my opinion and my eating style dont be serious .

    When I do sous vide a steak this size I would let this at least 90-120 min in the water, after 30 min the core temp is nearly like before, I would guess...!?

    I like your channel and obvious I’m not even a cook, but I can tell from deep down my heart that:
    1st- Souvi Process have a lot of error.
    2nd_ the meat was not cook to the perfection despite to the meaning of souvi a steak. Isn’t it supposed to be seared outside just the bother of it?

    This isnt even sous vide. At that temp and length of time he barely cooked into the surfaces of the steak. For all you people who think im just flat out hating, Sous vide is equilibrium cooking. In this video he basically cooked the steak in the pan. More cooking was done in the pan than the bath.

    I knew it would be raw inside. How can you cook meat in water that you can stick your fingers into completely comfortably? That meat would have looked practically the same had he skipped the ridiculous sous vide and just seared it in the pan like he did.

    I just make the dish with asparagus and red potatoes and it’s very good! Thank you. P.s. I did the sous vide in a rice cooker lol and it worked perfectly.

    But the steak is raw?? Sous vide steak needs to be cooked longer than 30 minutes in a water bath. How can you fuck up cooking steak, it's one of the easiest and first things a chef should learn.

    Cooked too unevenly, that's what happens when you just drop it into water without maintaining the temperature.
    A pretty thick strip of well done and a small core of rare.
