    Hola Alberto. Very informative. One can certainly appreciate how much work and time is involved in making barbacoa estilo Hidalgo. I'm not anywhere near ready to compete with these experts but I think if I was in the wilderness I could now barbecue anything I could catch. My brother spent 2-3 years in Hawaii and learned to barbecue pigs using a similar method. Luaus are an important tradition in the islands. Your video convinced me of one more thing. Never, never, never be reincarnated as a sheep (or a goat), especially in Mexico. Hola to Adriana. Stay well and avoid reincarnation.

      Good afternoon William, it was a very long job, from 7 at night not counting when they slaughtered the sheep and separated the meat, in addition to going to cut the maguey leaves and until 7 in the morning the next day, simply me I was recording, I ended up very tired and I had to spend the night in the town to complete the video ufff, and yes, as you say, I will never be reincarnated into a sheep or a goat hehehehe, greetings.

    Como dice usted el mezquite aqui en morelos no sirve para hacer fuego sin embargo en axtla s.l.p. mi esposa me mostro el mezquite de ese lugar y es un arbol macizo que sirve para lena y mas. Me traje una de sus semillas sin embargo de veinte solo pego una y ya la tengo en mi campo y ahi va creciendo algun dia me dara semillas para mas arboles...
