  • Is it possible that butter dry aged steak can be better than a real dry aged steak? Today I am dry aging one whole rib roast for 60 days, one half was in butter and the half other is the real deal to find out which one is best!       I take the end bread and toast it. Then i cook an egg over medium and use the bread end like an edible bowl for it. Breakfast of champions. Luckily I live in the country and cheap farm fresh eggs are plentiful around here.

    The butter just aislated the oxygen of the steak, stopping the oxidation and degeneration of the meat, u just preserved 60 days a fresh steak

      Well he didn’t actually dry age the beef. He wet aged it. You can tell because wet aging doesn’t bring the same funk that dry aging does.

      Yeah, it looks like that to me too. The butter didn't even appear dried out so it unlikely the meat lost much moisture. Biggest problem here is probably the butter turning rancid

      Adds a different flavor to the meat. The steak taste stronger. Over the course of 60 days the meat loses about 2 pounds of weight and becomes more compressed which gives it a more tender feel. It really breaks apart off the fork. To be very honest steaks are better with the bone.

      It makes it more tender because it gives it a chance for the muscle fibres to relax. Dry aging means aging while not submerged in anything while wet aging is where you might use a brine or other liquid mix around the meat in the aging period.

      Fun fact: designated public smoking rooms have a a dead cow above them with vents to send the cigarette smoke into the cow above. This is how steak is usually dry aged!

    Sealing meat in butter or other solid fats was actually an old method of short-term preservation since it worked a lot like a vacuum seal. The butter prevents oxygen from getting into the meat as well as repelling water.

    The Danish chef who does this puts the beef cut in the fridge for 4 days to allow it to start the dry age process. I have tried this and it works very well. It gives that dry aged flavor, and it also recovers the meat on the outside that was dried and normally would be trimmed on a fully dry aged steak. The outside becomes re-moisturized and does not need trimming.

    Dude, I love your experiments! I am a good cook when it comes to Italian (my heritage), which is obviously indoor cooking, but I have been trying to master grilling for quite a while & it is trial & error. I've dried, charred, burned & ruined my share of otherwise perfect pieces of meat - so I've PAID MY DUES! Your methods of grilling give me tons of inspiration and instruction. Much appreciation!     To me it would be more of a wet aged process. I don't see the moisture escaping like a dry aged process. Just my opinion

    I dry aged a prime rib purchased a few days before last Christmas for 30 days and am now aging it in butter for the next 30 days to get the best of both techniques. Gonna finish it off in my Traeger smoker next month sometime after Valentine's Day. Watching this video has my mouth watering in anticipation of the treat that waits ahead.

    Hey, guys. I've got an experiment idea/question. Is it possible to age a steak with raw honey instead of butter? I know honey won't grow bacteria and actively absorbs moisture so I'm wondering if it could work kind of like the butter method.

    The steak covered in butter is NOT dry-aged. It's sealed in butter. There's no drying at all, except maybe a little if there were any gaps in the butter. You've basically wet-aged it. You've preserved it, in the way that many foods can be preserved by being encased in fat. There are fat-based cooking techniques - confit for example. But they require heat. You basically prevented it from aging and fed yourself an old steak.

    I've seen the buttered sealed steaks before and I always thought that perhaps it would come out tasting like it was vacuum sealed. it's so good to see an amateur tongue come across the exact same conclusion without me having to be there to taste it because I trust the taste of the chef. what a great channel to suddenly discover you guys have answered a lot of questions that I don't have the money for.

      What's so confusing about all that is, both steaks were stored in a dry place for 60 days. So technically, they were BOTH dry-aged.

      I was in a steak restaurant in the US 20 years ago, where fries died in oil are the only vegan option. They could not cook fries to save their life. No two fries were cooked the same.
      "Is this Vegan friendly?" mother of the aspiring young vegan in the table next to me referring to the steaks that the waiter was passing with.
      "Yes,". and Pauses."The cow did not eat meat" was the best answer I heard in an American Democrat city by a Most probably a Republican waiter.
      Reply from the young child Vegan, "How do you know that, how about bugs?". "On my family farm, the cow did not like the flies and walks on bugs. Do you eat food you walk on?" asked the waiter "No" said the kid. "You got your answer." Some people are incredibly dumb.
      He then delivered it to two tables behind me who order it.
      I nearly choked on my steak on the first question, when he relied to the mother was pointing to the steak on the plate. There was nothing else on the plate.

      Go and have a ribeye that is dry aged and you'll enjoy it so much. Then you can have one once a year for your enjoyment. Find different steak houses that do a 28 day or more aging process. Enjoy the journey to aged beef :)

    You should try unsalted butter to see if the steaks keep most of its moisture.
    I would think that because of the salt in the butter, osmosis will pull out some of the juices from the steak

    Did you already see the Food Busker vid about the 108 days dry aged steak from Peter Hannon who manages to dry age without the funky off flavors? The steak he tasted had just concentrated beef flavor and no blue cheese notes.

    Test for you Guga to see if it can achieve similar results by instead of fully covering it in butter, leaving strips exposed without butter for flavor entry. With butter still covering most of it but strips of dry age goodness.
