    Ingredients
    Black eyed beans 3/4th cup
    Grated coconut 3/4th cup
    Tomato 1
    Onion 1
    Shallots 17
    Green Chilli 1
    Water 4 cups
    Few curry leaves
    Urad dal 1tsp
    Chana dal 1tsp
    Fenugreek seeds 1/2 tsp
    Dry red chillies 4-5
    Kashmiri dry red chillies 2
    Mustard seeds 1tsp
    Coriander powder 1 1/2 tsp
    Turmeric powder 1/2 tsp
    Chilli powder 1/2 tsp
    Salt to taste
    Coconut oil
    Jaggery powder 2tsp
    To cook the beans
    Add the overnight soaked beans in a pressure cooker. Add tomato, Salt, green chilli and three cups of water. Pressure cook it for 3 whistles and let the pressure release.
    Coconut paste
    Add 1tsp coconut oil, add Urad and Chana Dal, fenugreek seeds, curry leaves, dry Kashmiri chillies, Half Onion, Shallots. Once the coconut turns light golden brown add the dry masalas coriander powder, turmeric powder and red chilli powder, let the coconut turn dark brown. Let the mixture cool and blend it into a fine paste.
    Now add the paste to the cooked beans and cook it on medium flame for 10 mins till the gravy thickens. Thereafter add 2 tsp of jaggery powder and cook on low flame.
    Tempering
    Add Coconut oil, Mustard seeds, Fenugreek seeds, Curry leaves, Shallots, Onion fry till nice and brown. Last add dry red chillies.
    Add the tempering to the beans and simmer it for 2-3 mins. Your delicious Vanpayar Theeyal is ready to be served. Serve with hot rice.
