First: I really want to do a blackwood drum--one of the most interested and beautiful woods (and most difficult) I've ever worked with, and that was only for highlights. Second: I dig you turning jig. Must more permanent than what I've cobbled together. Well done!
For segmented snares, usually between 7 and 10mm, (1/4" to 3/8" sometimes with thicker integrated re-rings. Toms I usually make a little bit thinner, between 6 and 8mm. Bass drums usually about the same as snares, maybe a little bit more. Stave shells I always make thicker than segmented shells because they aren't as rigid, so usually around 3/8" for toms or 1/2" for snares and bass drums.
This is a very small Coronet Number 1 lathe, which can usually turn things up to around 12" in dia over the bed bars, but I modified the bars on my lathe so I can spin shells up to 16" in dia, but I'm only using the lathe for sanding rather than actual turning!

Yes, very similar, although African Blackwood is even harder and denser than Ebony. It's actually a type of Rosewood!
