In s1 she needed Sheila who did most of the job and in s2 even while channelling lucas she wasnt able to undo it. Yet here in s7 she is almost dead, poisoned to the point of no return and yet she is not only able to lift the spell on her own, she put it back up sealing all the armory.

Alaric and Caroline I guess found it 'fitting' to make the twins think Caroline is their real mom and Caroline is pretending/acting like it too. That's why Bonnie questioned Caroline saying, "You have the nerve to call them YOUR kids"
