The director created Behemoth as a fellow mammal titan for Kong as most other Godzilla Monsters are either reptiles or arthropods. I think its design is great and maybe iconic since it stands out from the crowd.
Behemoth remains dormant during Godzilla's search for Ghidorah's remains that desecrated by Apex Cybernetics and fight against Kong and later, Mechagodzilla as per his alpha's instruction.
Because it's about the only unique, original and decent design out of all the others. The others are just generic spider kaiju (scylla's only saving grace was her shell), big rock monster that we barely get to see at all, and a slightly edited muto.

You know you've done something right when you design a kaiju that has less than 30 seconds of screen time but almost instantly becomes a fan favorite.
