CAMBODIAN LEMONGRASS PASTE | KROEUNG | MOE MADE IT

  • This paste is used in many exotic Cambodian dishes! It's quite time consuming to prepare so we always make them in big batches and freeze for months at a time. I've come to appreciate the benefits of all these medicinal ingredients and the authenticity that it adds to Khmer cuisine. Hope you enjoy this short but sweet video, guest starring my cute Momma!
    **Important Notes:
    1. Forgot to add the garlic in the thumbnail photo but it's a must for this recipe! We left out the chili to add later because it varies with every dish.
    2. The mortar and pestle we use is made of heavy duty granite/stone, it's not as efficient if you're using a wooden pestle.

    Lemongrass Paste Ingredients:
    6 stems lemongrass
    20 garlic cloves
    6 pieces tumeric
    2 big bulbs galangal
    15 to 20 pieces lime leaf
    1 tsp salt
    Heavy duty mortar and pestle or food processor.

    awesome, I been wanting to learn how to make this. But My mom explanation just doesn't make since, she names everything in khmer ingredients, and I'm like "I need the English translations of these herbs that I need to get." Seriously, how am I suppose to go to an Asian market that have almost every herbs looking the same to me. Galanga, Tumeric, and Ginger look almost the same to me. But seriously thanks.

    Hi, can the paste be cooked from frozen or would it need to thaw first? Thank you for sharing.

      It can be cooked frozen if u are just adding into a soup but you should let it thaw or defrost for 30 seconds in microwave for stirfrys and most dishes. I store some in ice trays so its easy to work with and it portions well.

    why when i pound lemon grass it always come out very chunky and not chewable? i do strip the outer parts away. i do see in your video that she adds salt, i didnt do this. does salt help it crush better?

      Yes! Salt helps to break things down and draws out moisture/liquid. You should also try to chop the lemongrass as thinly as you can.
