- Kibbeh is a traditional Lebanese recipe which combines mince and ground meat with the perfect combination of nuts and spices. This savoury dish is a Mediterranean alternate to a beef croquette and can be enjoyed as a starter, main or side dish. Its most fascinating aspect is that it can be enjoyed several ways and in this Kibbeh recipe, we show you how to make 2 of them!
This Kibbeh recipe will introduce you to one of my favourite Lebanese friends, Antoinette, who is a master of this cuisine!

LEBANESE KIBBEH RECIPE )KIBE)
Ingredients:
200g burgul
300g ground sheep or lamb meat
500g sheep or lamb mince
50g pine nuts mixed with slivered almonds
3 onions
Cumin
Paprika
Dried mint
Salt & Pepper
Olive Oil
Water
STEP ONE - PREPARING THE BURGAL:
1. To start the Kibbeh recipe, put the burgal in a large mixing bowl and add water to it. Wash the grain well using your hands to mix the water through. You can leave this aside for an hour, but if you don’t have the time, a few minutes will also suffice.
2. Strain the water out, leaving just a small amount so it can continue to absorb.
3. Add ½ tablespoon of each of the following ingredients: salt, pepper, paprika, dry mint and cumin. Mix thoroughly so the grain is well flavoured.
4. Grate an onion and add it to the mixture, then blend it together really well.
STEP TWO - PREPARING THE MEAT
1. Chop up 2 x small-medium size onions.
2. Put a deep fry pan on high heat and drizzle 2 x tablespoons of olive oil.

Amazing Kibbeh! Before I prepared this one I didn't like Kibbeh at all, they totally don't know how to prepare it in the restaurants. They need to learn with this lovely lady! I moved to florida from Dearborn Michigan and ended up with an Egyptian lol. I miss the arabic restaurants from back home but I've learned how to cook it all myself now... this was a great recipe! My husband likes it raw but I prefer it cooked.

@@vincenzosplate Ho provato la ricetta. Buonissima. Btw, Antoinette: I learnt about Kibeh from my Brazilian boyfriend, because it's also typical in Brazil. African slaves brought them centuries ago (as they brought Manioc roots too) and it became typical. No matter the country, Kibeh is delicious

Best Kibbehs I ever had was in Brazil. Huge Lebanese colony in Rio de Janeiro. Lots of little Lebanese kiosks where you can eat Kibbeh. Delicious. Your recipe looks great. Glad i found your video. I will actually attempt to make it at home now. Tried is in the past, disaster. Most of the recipes are terrible. Yours looks great. You will forgive me however, if I don't use the dry mint. Sorry! I will use the fresh one. Will also add some mint to the yogurt. Can't wait.... Thank you.

Here in Brazil kibbeh is very popular. Another traditional way of eating is raw with raw onions and mint leaves and olive oil.

It is so delicious, and i will assure you if you visited lebanon you will love the things we eat it raw there. Dont take it wrong 😂 As for me i always say it and it may feel strange to you but italian and lebanese are so similar in ingredients and food. Basil, olive oil, bulgur, marjoram, etc…

I made this tonight, although I added some allspice to my version, and it was absolutely _phenomenal!_ My husband said it was "addicting", and we ate several! Great video..we make these all the time here as we are Lebanese but live in Australia, tradition continues. The only difference to your recipe (but it is a big one!) is that we add chopped parsley and pomegranate molasses to the minced stuffing..you should definitely try adding these for a delicious depth in flavour :)

WONDERFUL! Lebanese are the masters of kibbeh ;) She does it perfectly--my favorite dish (we called them footballs as children) And bulgur is healthier than couscous because it's a whole grain ;) Now....which do you like better--fried kibbeh or arancini? ;)

My husband is Palestinian/Syrian, but grew up in Jordan. He wanted me to ask his mom how to make hers, but I don’t like her food, so I found this video and he LOVES this recipe!!
But it is just the two of us. Is there a way to pre-make and then fry later?? Should I freeze them prepped, or already dried and then bake later?? 🤔

Well I suggest you to put them (raw) on a tray covered with aluminum foil and put it in the freezer for a couple of hours. When they’re hard, transfer them into a plastic food bag.

@@vincenzosplate It came out great! We followed your mom hollowing it and it took some practice! Only thing I different was seasoning the meat that I cooked first. When the paprika hit the pan, that scent immediately told me THIS is the key ingredient!!!

👌bravo, that's the real kibbeh, crust is half and half bulgur( bourghol) and fine meat. My mother, grandmothers used to make it that way.
Today, due to cost of fine lean meat, people have come up with different 'vegan' recipes for the crust. Ultimately it absorbs more oil. The stuffing is the same meat based. Local and seasonal variations include parsley, pomegranate kernels, pomegranate molasses, coarsely crushed Aleppo red pepper etc.
I always do my research before I create dishes from other culture, those are really good suggestions; will definitely give this a try! Thank you so much.

growing up my dad used Cinnamon instead of Paprika , i'm sure it depended on how his mother made it but i will try it the next time w/ Paprika
Randy Nacol Hi Randy, you're right. Traditional kibbeh spice and herb mix is: allspice, cinnamon, black pepper, salt, and basil. The traditional recipe does not have paprika, cumin and definatly not mint. You could use mint, paprika, and cumin, but the flavor will no longer be the traditional kibbeh that Lebanese people expect.
