Just that Kichi Kichi Omurice is more well known because Chef Motokichi loves to entertain his customers with his cooking, which explains his popularity as a chef. I do agree with you that he is underrated but I guess his recent appearance in Buzzfeed’s video where he taught Andrew how to make the famous omelette made him much more popular now
Chef Motokichi’s omelette is kind of expensive (and it worths). His restaurant is the most popular one in Kyoto and attract a lot of customers.. I think this little place is good for him to show his cooking way and entertaining the customers.

nah those are carbon steel pans. basically same concept of caring for and seasoning the pan, but much thinner. still a little heavier than the average pan though

So when displays the omelet on the plate and opens it, it looks like it's raw inside the omelet because it spreads all over. It's hard for me to eat omelet if it's not cooked all the way.
