It's the hallmark of good writing and good acting that Fiona could be such a human villain. Her flaws are human flaws, and yes, she could be a monster at times, but there was always a sympathetic quality to her. My only real problems with the character are (SPOILERS)

Papa Legba saying that she had no soul. It was necessary to close the door of her making a deal with him, but it doesn't make sense. Fiona could love and grieve, and regret. Clearly, she had a soul.
That her love with The Axeman turned into her personal hell. The stink of fish and mediocre surroundings for eternity would be a torment, yes, but it only makes sense if it isn't actually The Axeman, but some hellish projection of him. He actually did love her, and wouldn't force her to do anything. Of course, it could be his hell too, that he would have her forever but she would always be miserable.
In any case, great writing overall and fantastic acting from Jessica.
