When the one cooking is also handling the cash that is a serious health violation. Money is filthy so every time she touches cash it cancels every other hygiene step she may have taken. There is also the personal health of the cook touching the cooked food.

@@sharmilamaranan7878 Yeah, these kinds of places are not for the squeamish. There are well organized small family outlets in Japan and S. Korea where they DO have tidy and hygienic foods for counter service & take-away. One-person operations are nearly always sketchy on the hygiene side.
