Dakotaraptor does have moderately good fossil evidence for existing, although it's complicated. The holotype - the set of bones that were first described and are supposed to have the details defining what the animal is osteologically - is chimaeric in nature, as it was found right inside a bunch of turtle bones and bird bones jumbled together at some river deposit in Hell Creek. However, apparently there is a paleontologist who worked with the Saurian devs way back when that was being developed who had found more material and was in the process of describing it before the devs released the game's trailer which included the animal. The details on that part of the story are fuzzy, but what is known for certain is that the paleontologist got so infuriated that his counsel was used in the game's creation before his pet project paper was released that he trashed the paper and now the good material is sitting around in his private property where nobody can study it and, until he allows it or dies and his next of kin gets it and allows it, will never be studied or described. How long will he hold the grudge? Nobody knows... Also there's really big dromaeosaur footprints found in Hell Creek, which are bigger than the size estimates for Acheroraptor - the other Hell Creek dromaeosaur. Those are described, but whether they belong to Dakotaraptor or Acheroraptor (if the estimates are wrong) is unknown and up for debate. Debate will not get far though without more and better fossil material.

I think animations and rigs could be carried over from Planet Zoo tbh. Would be cool to have mammoths that use elephant animations, for example.
