Luckily, we can tolerate the tomato skins. I blitz them in my Vitamix and can 'free' tomato sauce with them. It's so great that ForJars copied those vintage openers...I purchased mine from a YT seller years ago and just love it. Useful for lug lids, beer-type glass bottle tops and even plastic beverage lids. The original has a tab at the end of the handle for those plastic ones but you can use the bent prongs atop to do the same. I'm in the middle of applemaggedon right now and running out of quart jars. Four canner loads already and I'm only about 1/3 through the tree. My favorite salsa is 'Garden Fresh Zucchini Salsa' from Noshing with the Nolands and like you...I swap the vinegar but for lime juice and also back down the sugar. Try salsa on scrambled eggs and surprisingly, also in tuna salad. You're doing great and hopefully are enjoying your vaca now.
I love my Pry-A-Lid ( the original). Not only does it remove your lids without damaging them ... and I reused a couple on some jars of water 3 years ago and they are still sealed... but you know those stubborn pickle and olive-type lids that you have to bang on the countertop to loosen? Your jar opener breaks the seal so that you can just twist it off. You're welcome. 😊
So with your 10 pints, you actually got 45 half-pints! Yes, I cheated and waited until the end LOL WOW! But, you did add the jar of tomato sauce. But still a BIG difference! Ar least you can scratch salsa off of your list for next year ... and the next!
Yes but the tomato sauce was in the recipe too lol I forgot I add it to a few recipes too, like taco soup, taco casserole or sometimes I dump it in with a beef roast so we might just go thru it all this year lol
We just made some phenomenal salsa yesterday .will be making more this weekend. And yes we do love the sound of the lids pinging don't we? 😊
