Worked: covered 1 tablespoon of kefir grains with 1 cup of 2% pasteurized milk (could have been less! / at least enough to submerge the kefir grains), placed in freezer, waited 5 months, moved from freezer to fridge, thawed for 24 hours, strained kefir for the grains, placed thawed kefir grains + milk combination in milk (which was also frozen at exactly the same time and underwent the same thawing process!), left kefir grains + new milk combination at room temperature for 24 hours, repeated previous 2 steps (strain; kefir grains + new milk) for 3 days, got over-fermented beautifully thick kefir: the grains are alive!!! And the kefir seems to be healing my autoimmune gut disease!? Thank you, Laurie; you are awesome!

I think you are doing it exactly right. I did the same following my own intuition and keeping it 3 years in the freezer. The only thing is that I washed the grains with water and dried the excess waters with paper towel. Also I made sure there is at least one third of free space in the glass jar. It was defrosted by thaw in the fridge over night and after changing milk every day for 3 days it started to make perfect kefir yogurt.

I'm new at making Kefir I haven't got any big grains, my 3rd day, and all I see is what look's like mush, it doesn't go thru the strainer, so I just put it in more fresh milk. I ordered them from amazon and noticed that there was a lot of powder and not many grain's it looked like cornmeal. so my Kefir milk has whey on top and I guess the milk is at the bottom, but afraid to drink it, it's sweet not sour. on the video's the grain's look big, unless it's the camera, I've never seen them before. so I guess I will learn. so do you add sugar when you put your grains in milk?? thank's Nicky

L Mc you can leave them in the fridge for 2weeks you just have to make sure they have enough food. So leave them with 2 cups of dairy milk. If your doing nut milk leave them with enough date paste for 2weeks as well I would do 5-6 tbsp with 2cups nut milk. Just to make sure its enough

Does freezing change the microbial profile of the culture? After freezing my grains for 2 days I got them out to make some kefir (which by the way is not pronounced keefer but anyway) and the batch of kefir from this last fermentation came out a little different, like it was missing that slight alcoholic flavour which would indicate the yeast kinda suffered from the freezing but the lactobacillus did not (it still fermented).

    • @LaurieEL

You can switch from dairy to almond milk. I used to use dairy milk first. Almond milk helps me more. I do not know if you can switch back to dairy milk kefir after that though. I have never went back amd forth and back amd forth. One time is fine though. You can put it in the fridge if you are going on vacation or wanting to slow down the fermenting process. But I would do this all of the time Kefir thrives in a temperature of 70-74 so putting it in the refrigerator often would not serve it justice!!
