Thanks for pointing that out. I'm looking forward to pulling the trigger on a fridge 48 and debating whether or not that extra grand for insulated firebox would be needed for sure and I'm up in Central Wisc and plan on using year round or at least on the nicer winter days. Either way, its going to be about a year before I'd see one if I ordered today.

I have a Workhorse 1975 and it is amazing. Brandon called me Friday letting me know my Fridge 48 was ready for pick up. I pick it up this Friday! Between Jambo or Outlaw, I like the Outlaw better. If it’s not the special customization you need, the Workhorse is amazing.

That's a great smoker. The question is whether a less efficient horizontal offset smoker will produce an even better smoke flavor? Jambo seems to the the Rolls Royce
of the smokers. That would be awesome. The best smoke quality that I have had anywhere, is from KBQ, Karubecue. I can use logs with 25% to 30% moisture content running
clean smoke for the most amazing smoke flavor. It is hard to burn 30% logs on offset smokers, while generating clean smoke. Last cook I did was high moisture post oak, I was able to get the maximum biscuity aroma, characteristic to post oak, but also very clean. Also Mesquite is difficult to use in offset smokers, as one has to use small logs, and make sure to run ultra clean smoke. It is a piece of cake on the KBQ. Some people nag about the need to feed wood every 20 minutes or so, but I don't mind, cause the result is unrivalled.
It also has a feature to dial in some dirty smoke, if needed, depending on cooking strategy and wood being used.

I haven't heard of TMG, but I have heard of Outlaw and Jambo. It seems like you are more in the realm of the competition cookers. I recently purchased a Fatstack 120 gallon backyard cooker and after a nearly 3 year wait, I should be receiving it in a few months. It has that insulated firebox which will be nice compared to what I am currently cooking on. I appreciate the content! Love learning your perspective on bbq!

I am most definitely looking at a comp cooker for sure. I think I’ll always keep the TMG because it’s great for pop ups and sample days which we try doing often! Outlaws and Jambos are so damn nice, but your Fatstack is gonna be awesome!

I think it’s more about the size of them and how they flow for larger pits! I’m not 100% sure but that would be my first guess.
