Japan has unmanned connivence store too. I went there last weekend. It is at Takanawa Gateway Station, Tokyo.
It‘s the same as all other shops without cashiers xP Eventhough still nice. The only difference is that the door is locked. Although here they don‘t lock the door. The store believes in people‘s honesty😊

At Amazon go, they still have staff inside, and also a lot of cameras. At Bingo Box it seems like someone could take two things but just pay one thing. how do you prevent vandalism, gross contamination (e.g. drunks urinating in the box) or homeless people sleeping in it? And how can I get out of the shop, if I don't find what I was looking for? Do I always have to call the number?
I was listening to an interview with the founder on the 996 Podcast. They've had very little theft, despite hundreds of outlets so far. The most common incident is that a mother and her young children go in and the child picks something up without telling their mom. Note that inside, you're under surveillance, they know who you are, and they can track you down later.
I highly doubt any homeless people would have a phone. You need one and a wechat account to even get in in the first place for the door to unlock.

How do they prevent theft?
The stores are equiped with cameras. Also, shops require scanning a QR code that is linked to your identity, so if necessary thiefs can be traced. But the presence of a camara is most of the time enough. Start-ups have claimed that the amount of theft is negligible, though I can't verify that with actual data.

I knew it's from France, but not having them here in The Netherlands and having dropped French in high school I really had no idea how to properly pronounce it. ;-)
Too much hastle for a ice-cream
Depends on what you compare it to. This 'Auchan 1 minute' concept was meant to save people a long walk through a supermarket, just to buy a few fast-moving items. Everybody in China uses WeChat, so the scanning of a QR code isn't much of a hassle. Grabbing your ice cream, paying by self-scanning and leaving would be much faster than going inside the supermarket.
Having said that, this specific unmanned store has already disappeared, probably because of the competition from convenience stores that have been booming in China and often also have self-scanning and mobile payment.
