I actually stopped by their shop a few weeks ago and they had a cargo bike with the new Shimano EP801 setup they were testing out which has a nice color display. It's a big upgrade from the current setup which was apparently chosen due to Covid supply chain issues. Hopefully they transition to the newer setup soon.
I'm 6' 1". Xtracycle sells one bike geometry and then multiple "fit kits" with different stem and seatpost lengths to accommodate different riders. The large setup has a 450mm seatpost which should be more than enough for you - xtracycle.com/products/sizing
