    I'm 44. I took my first kitchen job at 15, got on line right away, and I've been doing it ever since. Took over the running of my first kitchen in 2005. Since then, I've moved back & forth... Chef, Sous Chef, Line Cook. In the last 6 years, I've seen the hourly wage, both mine and for others, go backwards... and I live in a city (Hamilton, Ontario) that's seeing a culinary boom. I think this industry, at least as far as back-of-house goes, is headed for a crisis.

      Colin Egan we definitely agree that there is a shift and we need to address it as an industry. As a whole the industry does well at adjusting we just take a alot of casualties (if you will)in the process. I hope that as industry we can prepare for change and make sure we take care of our people. I know there will be trial and error but none the less it will be a step in the right direction.

      I do hope you're right. I pains me to watch so many young, talented cooks with potential move to the FOH or leave the industry all together to go do construction of something.

    How much time does it take to become an executive chef.
