The classic setup: threepeaters (or repeaters/gatling peas) in the non-water bits for three or so columns, followed by cattail and torchwood, and finally, tallnuts with pumpkin. Maybe even two columns of them in case. The rest of the space is then filled with tangle kelp and squash. The water parts in the columns that were filled with the threepeaters/repeaters/gatling peas are to be filled with sunflower (or more Peas if this is last stand endless).
i would plant spikerocks instead of squash but that's a good setup too.
And make the back row twin suflowes

How to do survival in pool
Place 2 sunflowers all the way to the left in the top and bottom corners and put one to the side of each and turn them all to twin sunflowers now add 2 Kernal pults in front of the twin sunflowers and repeaters and as for the water only put cattails halfway through the pool then add a row of Melon pults and make the 2 closest to the pool winter melon pults and that’s pretty much as far as I got, go batshit after that
