    What other cheese can you use. I'm not a fan of stilton or any blue cheese.

      if you don't like blue cheese try with taleggio or brie. the latter is more delicate so you might to season more the stuffing. mozzarella also can do ;)

    Delicious! What would you recommend using instead of blue cheese? I find the flavor of blue cheese to be a bit too strong for me. Will definitely try this recipe. Thank you for the video as always :)

      try ricotta, also perfectly with spinach an mushrooms, just have to season it a little bit more cause oft the more neutral flavour :)

    Excellent recipe, I'm trying a variation of this tonight and including butternut squash. Just a question: does all the moisture from the spinach and mushrooms make the puff pastry soggy?

      +Grindylow it will have a soggy bottom but it's good 😂

      Grindylow I just took mine out of the oven a few mins ago and the bottom is not soggy at all. I was careful to transfer as little water as possible when removing the spinach mixture from the pan. This was my first attempt and it's nearly as pretty as his so give it a shot. It's not terribly complicated or expensive. I hope yours comes out nice. 🤗

      The butternut squash actually soaked up any excess I might have had! I also put added a thin filet of salmon, so good :)

    could you use white wine instead of Brandy? I want to make this for my housemate and I but neither of us drink brandy, and alcohol is so expensive, I wouldn't want to buy a whole bottle just for this. Either way, this looks amazing!

    Hi Ian this recipe looks so tasty & easy, only thing is I'm not crazy about Stilton cheese due to its v.stong flavour. Would you recommend any other type of cheese as a possible replacement? Thanks!

    How come the puff pastry stayed so nicely low? Mine got super fluffy and blown up.

    Couldn't help thinking through the whole video that I need to make this but not quite so vegetarian. Carnivore at heart but loving it all the same Great jumping off point. Would love to see your take on a classic zucchini/courgette boat though.

    Lovely dish mate...if i wanna add chicken or meat mince in the stuffing...would i have to cook that separately then put it inside the pastry before oven baking? Or can i put in raw mince....only thing is im worried raw mince will release a lot of water and it might ruin the dish...i guess i better cook it separately. ... By the way lovely kitchen....could you tell what sort of knife is that you are using..looks welll cool.

    I really want this but I am pregnant so I can't have stilton, I'm Muslim so I can't have the alcohol and I don't like mushrooms 😂😂

      Hmmm...the stilton is cooked and the alcohol will all evaporate in the cooking process. The mushrooms might be a problem. But perhaps the desire is gone in any case.....
