  • One of the best superfoods on the planet is one that thousands of Americans are eliminating from their diet, wheat. The problem with wheat flour is we have stripped it of it's amazing nutrients, given it too long of a shelf life, and wonder why we can't tolerate it. Lets get back to the basics and make this amazing superfood in all of our homes.

    Appreciate the info in this video and can’t wait to try the bread!
    One bit of info for you, re: GMO wheat, yes the wheat itself is not GMO, but nowadays farmers are spraying a lot of grains with Glyphosate as a desiccant. To dry it out to make easier harvest. So any grain not organic is suspect.
    Sure that Azure has organic options

    This is so helpful! I just started on my freshly milled wheat journey thanks to Sue Becker as well. Would love to see how you do your tortillas with freshly milled starter.

    Just found you 🙏🏼🥰 I have been trying the freshly milled wheat berries, for like a few months, not so good results, hubby would say it’s good & eat them , not good a few different ones from different UT ppl. But yours on Sunday, even though I made a kinda big mistake, it turned out Amazing 😅😊❤ God blessings to you & family 🙏🏼 today hubby & I are off of work, & making your recipe the right way, but I am going to do what I did the last time, (my mistake) because it did rise quite a bit, & was so light & soft, & delicious 😋. What I did the first time was I did everything measured right, & was letting it go through the 1st hour, with just the milled flour & water, but I got side tracked, ( we have company-family from the west cost of FL) & I forgot to add the starter for like maybe 4 x’s stretch…. Lol what a goof I was, then I added the started, ( one from Azure), & only could let it go to 4 x’s for stretch & folds, it was too late, so we baked it per instructions, we were very shocked it rose above the pan very nice, & was delicious! Today I experimented & did 3 x’s with the water & milled flour, & the 6 x stretch & folds… it’s in the oven right now! Excited to see if it rises high again!       How did the 2nd loaf turn out? So, the first time you made your mistake, you did 4 stretch and folds, then added the starter and then did 4 more stretch and folds? So 8 in total?

    All I use in my home is fresh ground flour. Can I assume that making a starter with freshly ground flour involves the same process? Feeding twice a day vs once a day and using the same amounts of water and flour to feed it? I would use either fresh ground soft white organic flour, or a middle eastern grain called Kamut cuz it is super high in protein. (15g per cup of unground grain.)

      Yes, you should be able to… But I haven’t tried it.

      Thank you! Also I am using freshly milled flour but find it is not a soft/creamy as yours when stretching. Can I add a little more water to it?

      I prefer white flour for my starter, however, if you use fresh milled then refrigerate in between use.
