I do a bottle of low sodium dales then refill with water and pour it in, prolly two table spoons of Worcestershire sauce one table spoon soy, garlic salt pepper, red pepper flakes just a little Cayenne pepper, paprika, some lemon juice and I don’t think I’m forgetting anything but it’s best Iv ever had and people love it
Put the meat in the freezer till it's really firm but not frozen, you will be able to get more uniformed slices I bought a cheap meat slicer that is what works the best Put a plate in the bowel to hold the meat down

We have been put on a 3week stay at home executive order by the governor until the 14th of April but our turkey tags go on sale on the 30th of March so we will be getting "groceries" and just so happens they sell tags at the grocery store lol
Make sure to get all that moisture and condensation out the bags or will mold quick, even just overnight, if ya dont put it in the refrigerator.. looks good tho.. i want jerky now, i think that Tillmook Smokehouse has best packaged, it is basically homemade anyways. I only live about 60 miles from Tillamook Cheese Factory

I've tried the whole taxidermy thing it's no joke, it takes the heart and patience of a true artist!! I'd love to see it but it's not the style video you need to do,... it's pretty harsh as far as timelines go!! Just tanning your own can take a month!! If you've got the time aside from making videos, with your experience with prepping hides and getting them ready... You're most of the way there.. BUT...! the artistic part is nothing short of astonishing...Give it a try just make sure you bring us along on the educational roller coaster!! For me I'd love to see you go talk and spend an hour in your family favorite taxidermist shop!! And start from there!! If you do it right and be honest like you always are...I think it'd be a kick-ass series of videos!! PS I Love goose the only reason I got busted on shish kabobs was because somebody found a steel shot BB.!!! And she said you don't kill cows with birdshot!!!???🤔🤔🤔🤣🤣🤣🤣🤣🤣🤣🍻🍻🍻🍻 Even after that everybody ate all of it,!! they just made sure to chew a little more carefully!!

I wish I could make you guys duck and goose it's the best bird meat . Ive made duck that taste like filet minJon . You have to soak it In Saltwater brine and buttermilk get all the blood out of the meat and cook it rare or medium rare
Next time you go to South Africa, ask them to give you some biltong or dried sausage. You will love it. And if you go to Namibia again, ask them to give you some Kudu biltong -- Kudu biltong is the best biltong in the whole wide world. It's our "jerky", but I have never grown to like American jerky.
Your type of jerky doesn’t have a long shelf life without freezing it. The more you dry it the longer shelf life it has without freezing it. Jerky is the only way I make any of my waterfowl.

Try adding Ginger to your marinade, not spice form. It will give your marinade a different Teriyaki taste you might like.
