If I delete my Sent messages will it also delete the recipient's received message in their email?

Email is insecure that I am facing the problem. Privacy is not secured.
There are lots of messaging tools that are also insecure.
This is why we are encouraged to use secure portals for some of our most confidential messaging.

If you sent it as an attachment, unless you typed a bad email address, it was delivered. Maybe, contact the person you sent it to and ask them to handle the document as you wish.
but what if the message hasn't been delivered yet ? say, i tried sending a big file, then deleted the email from the sent folder before the email has been delivered to the other party ? (i don't know if the message is still being sent but i assume it is since the other person hasn't get it in their mail ?).
there is no way for you to delete a message in the other person's email application, unless you are using some type of security application. In the situation you are sharing here, I can not speak to what happens to a partially sent message. It may or may not have been delivered, depending on the timing of your actions and the application you are using.

i've replied to a message on a gmail. But after some time i cant find the message i replied to and my reply to it anywhere. Its all gone. What could have caused this? Did someone access my account and deleted it or could have there been an external component?

I have had this happen to me as well periodically.
Look in three places - All Mail, Spam & Trash. Search for a phrase you had in the email message or the email address you sent it to.
Someone accessing your account is not likely the reason you can't find the message(s). If you have this fear change your Password, turn on 2FA, add a Recovery email address and Recovery phone number.

Oops, sorry about that. However, I don't have a way to delete someone else's messages, once I send them and after the pause period of a few seconds.
It means that a message that I sent to someone cannot be deleted from his account automatically, that message remains sent on his account, and a message that I sent from my account can be deleted.
It means you can only delete messages on your side. Nothing more.
It deletes it but puts it on the bin of the receiver, also anything on the bin of the receiver will be automatically deleted after 30 days, thats if the receiver havent deleted it themselves.
Any mail sent to another person will not be automatically deleted after 30 days, unless their email platform is setup to remove trash & spam after 30 days. It's safe in their inbox.

I had a series of email correspondences with the managers at my job over the course of the 2 years i have been working with the company.
I recently filed a grievance with human resources. When I went to find the smoking gun emails I couldn't see anything on my end but I know I sent and received them.
Older, benign emails still exist on my end but the emails that trace a habit of mistreatment towards me are gone.
Can they make unfavorable emails that are sent through their work email disappear.
The only way a domain admin can delete messages in your Inbox/Sent Items is to log into your account.
If you had 2 FA enabled, they would need to have access to this.
If they do not know your password, they would either need to reset your password or ask you for it.
However, yes, it is possible.
A protection tactic regarding these email messages would be to forward them to another account and/or take screenshots of them.
I'm having this same issue with a broken contract. The sender deleted the emails sent to me and subsequently I can't even find my own replies?? Were you able to find anything? Also I'm sorry for what's happened to you.

Hmm, I am not sure what you feel is fake - I answered a question and tested it to show what happens. When you delete your sent items, it delete the other person's messages.
