Yes, the tortilla was cooked too long if crispy. Dip in hot oil for a few seconds and turn and cook another few seconds and remove. We use red chile sauce rather than salsa. Yummy! ;)
We make huevos rancheros often and found it best to use red chili sauce or enchilada sauce instead of salsa. They are thinner and tastier for this dish. After warming the tortillas (either corn or flour) in the pan, put them on the plate and cover them in the chili or enchilada sauce. Then layer the rest of the ingredients on, ending with the eggs. I add a little more sauce and sprinkle with cheese. We have been watching your adventures forever and really enjoy your travels. We are based in Colorado and travel in a Class C. Holler if you are ever near Colorado Springs and we'll take you out for some great Mexican food.

I suggest layering the salsa for the huevos rancheros dish. Layer salsa under the tortilla (right on the plate) and then layer on top of beans and then on top of egg. I love using a crunchy tortilla - gives it great texture. Another tip is having salsa on the runnier side and home made if possible.
Just some food for thought...if i need to keep something warm, I put the plate on a pot of warm water. Or in this case, in top of the pasta as it cooked. Another trick is to tent with foil, a pot lid, or cake pan and put it in the oven where it is away from drafts. I love to watch you cook and have your cookbook 😊. Happy camping.
My opinion best thing to use in microwave just warm it up and just enough warm it up that's probably what they do truthfully I doubt it put in a skillet or anyting have a good day

If fishing a windy bank-use a white spinner bait with silver blades, willow blades,1/4 size one. Cast into the wind(takes practice) and bring the spinner bait back, you should feel the blades vibrating. Fish parallel to the bank back to you. Fish will stage themselves with their head in the wind, waiting to catch prey. Throw out at different distances to see where they may be sitting. Or find right where there is a drop off to deeper water. One can use a Rat-L-trap lure too. White Bass like windy banks as bait runs up into the shallows.!good luck. Try browning Johnsonville Hot or Mild sausage (5 links) out of the skin and ground ( chop it up), with 2 tsp of minced garlic and a half fine dice of yellow medium onion, and a small can of mushroom pieces in a skillet. Drain the fat. Back in a medium pot and add your fave pasta sauce. ( we like Prego Italian Sausage flavor). Add 1 Hornet Turkey pepperoni pkg. cook penne pasta on the side for however many people and leftovers. Add pasta to sauce to taste. Top with fresh mozzarella.
Go out to a Tex mex place. They can tell you how to do huevos rancheros. No bottom tortilla. Ranchero sauce, not picante sauce. Maybe you are trying to make huevos montelenos? Try chilaquillas. Love your videos. Yet maybe ask viewers for Texas advice.
I was in this campground last year and I had the displeasure of meeting a Texas Asp. Wow did that hurt for a couple of days. It fell out of a tree at my spot and landed on top of my foot. I knew nothing about them nor even knew they existed. Lol . Love this park!! I had camped at Mustang State Park for a week and added this one for a return trip to San Antonio. Awesome park ! That trout looks so so good!! Back in the 70’s my husband would catch so many trout in Tampa Bay! That was back when it was very clean ! We would always have a freezer full of fresh fillets and they were out of this world good! This vlog brought back some great memories 💜 Love y’all 🥰

I am sad that we missed you in Texas. We were at choke canyon state park this past week and we were going to stay at lake Corpus Christi but chose choke canyon. Glad you love it there it’s a beautiful park. Love the recipes.
We just left that park four days ago! We always stay in site 10. We love riding our ebikes there. Kellie, you would love Choke Canyon State Park. It has a bird sanctuary. Definitely put the trout dish in the new cookbook.
That fish pasta recipe would def be one I would make from a cookbook. We need to go back to rockbridge MO and replenish our stock of trout for the freezer. We are currently in Oregon and hoping to catch some trout here, but Jonathan is having Cody luck with fishing right now.

I'm loving that you are in Texas and showing the sights around the State Parks. We moved to Texas from Michigan two years ago and let me tell you, it seems to ALWAYS be windy here! I love that we have so many birds year around and love the warmer weather!

As you guys start heading back up towards Arkansas, consider staying at Tyler State Park and during the week you may be one of the few there. Clean and a very nice State Park. I would highly recommend site #604. This is a camping spot with water no electric but it is better than the RV area in my opinion. Thanks for the Sunday Surprise video. Wonder if you guys will be heading back to Angelina National Forest. That was a great a great spot you guys had found on the water.
We never ever put cumin on black beans or salsa or on the eggs because it gives a different flavor . It’s like making an Italian dish and using Mexican spices😂 just saying use all Mexican ingredients, including the spices.
My wife had Cushins disease and when the did surgery to remove a mass on her pituitary gland they went under her sinuses and now she can’t smell anything

Cook tortilla in the juice of racharo sauce , together until soft, then a over easy egg on top with avocado and crema over top, like sour cream,

South Texas is definitely not flip flop friendly. That's what we call jumping cactus.
Quick tip. Use adhesive tape to extract the small spines from the cactus.

I agree. Goliad State Park is one of our favorites. A very peaceful vibe there.
