Try putting your rod at an angle of 60 degrees or so instead of 90 degrees to the blade. Can angle the back of your jig that your stop blocks and J support go up against. Or use different wedge shaped pieces to achieve different angles against the square back of the jig.
Cutting the spiral is a similar process to how screws in wood were first made. And you can still buy the tools (well, in the US and UK you can) to cut threads in wood by hand.
Всё намного проще. Надо не двигать каретку по столу. Надо вращать заготовку. А угол вращения (шаг спирали) задаст лезвие ножа. И не будет ступеней совсем. Решается за минуту и не надо опытов многомесячных.
OK, I am no carpenter, but I'm pretty sure, this can be solved better, by using a lathe + the mechanics used for turning screw threads there?!?! Or is it just showing off how to do complicated things by hand?

Yes angling in two dimensions should be able to have the cut aligned with the spiral.
