Wsalam, so for this video She used one large cup of water (approx 300-350ml) for 600g flour roughly, you want the dough to be fluffy but slightly sticky and yes you must leave it to set for 1 hour before rolling it out.

I use a electric oven and it’s set to 220 degrees and time wise you just check until the top is golden/brown
