Used to buy Smoked Provolone sliced @local italian store. I froze just like that in waxed paper. Lasted years in deep freeze. I know bcz I found a pack hidden underneath bones for broth. (*Chest freezers always hide surprises for later discovery. ) Your white cheddar looks wonderful.
I bought that cheese from Azure this month. It’s delicious! There are just two of us as well. I slice and block mine, vacuum seal and into the freezer they go!
Using a simple wire cheese slicer on a cheese board is just as fast and so easy. I never have frozen it sliced that's a good idea to use the paper. I just cut it into smaller blocks. Will try this next time for part of it. FYI previously frozen cheese crumbles very easily and shredding it even by hand is super fast. You can even crumble it up with your fingers

I'm so glad to see you're doing cheese in bulk. I utilitize milk/meat from local grass fed/finished cows. The plain precut unbleached freezer paper squares are local too. 😊
I enjoyed watching your trip to get your Azure Standard products. I have been wanting to do this for a while. There appears to be a pickup station near Columbia,MS which would be the nearest to us. Incidentally, as you drove home you mentioned Rester Road. My husband is descended from the Resters and Bealls. Did you know Curt Rester, Danny?

We have an Amish store about 45 minutes away, and next time I can get there, I will be comparing what they have with what’s available from AS. The one thing I would like to get, which is apparently not easily available, is raw cream butter. Pasteurization destroys almost all of the nutrients except minerals.

I don’t wrap mine. It stays great just in vacuum bags.
If you can, without crumbling the cheese, slice long-ways, stack, then cut the stack in half with a knife. Half the slicing.

The catsup you bought is very good. The Rumanio brand cheese is great.

Where did you find Tillamook in bulk? I only found it in that area of Oregon. I live in Virginia
My husband picked up a small scale slicer at either a pawn shop or thrift store. Very handy!

You can use a hair dryer to warm the labels and they peel off easily in tact with the adhesive to put on your storage containers

I took them out of the bag. You don't leave them in that bag. They were in refrigerated truck and then travel home. Always remove from plastic bag
