My dad from amritsar used to fry twice. Once with medium to low flame to cook it thoroughly on the inside. Second time, high flame to make it crispy on the outside. So yummy !

That's what a lot of fish fry road side stalls do, they half fry, keep it aside for customer to come and place an order, when he's ready, he'll take the half fry from room temperature into boiling hot oil. That's what the roadside ppl do, that's what my dad used to do, that's what I do at home for my guests. and then the guests love me. lol !!

I tried this recipe today with Rohu fish. The taste was superb.Never knew carom seeds and hing can bring in such unique taste. Thanks Chef.
Fish fry is tasteless without carom seeds (ajwain) lemon n garlic 😋😋😋
