Skillet Cajun Turkey & Swiss Chard Dinner

  • Healthy, low fat and low calorie!
    INGREDIENTS:
    1 pound lean ground turkey
    1 medium onion, diced small
    1 red or colorful pepper, diced small
    1 large celery stalk, diced small
    4-5 garlic cloves, diced small
    3 tablespoons extra virgin olive oil
    1 teaspoon kosher salt
    1 tablespoon paprika
    1 tablespoon ground cumin
    1/2 cup long grain rice (if using brown rice, precook ahead of time)
    2 cups chicken or vegetable stock
    two tablespoons fresh thyme (or use 2 stems of fresh thyme)
    1 can dark red kidney beans, drained and rinsed (dark red kidney beans are the most nutritious)
    1 bunch swiss chard (about 4 cups) chopped in 2" pieces
    1/4 cup flat leaf parsley, chopped fine
