Man, I love you guys so much! Topically, but also your basic approach to everything and comprehension of the big picture. Ridiculously gratifying to hear the things I think stated clearly by actual medical and scientific professionals.
I don’t have celiac disease but I know when I eat any products containing flour, I get sick. The only thing I can honestly say that doesn’t upset my stomach is my homemade sourdough. So I strongly believe fermentation is necessary.
I have a gluten allergy and I'd have the least symptoms when I'd eat whole grain bread in contrast to very white bread products such as bagels or pizza. I'd still get symptoms though. That's why I did stop eating gluten entirely and it feels good not to have gut problems daily after 10 years of suffering from them.
My grand-daughter who is 12 years old has been diagnosed with Crohn’s disease. I would really appreciate it if in a future podcast you could address this disease. Thank you for sharing your extensive knowledge.
My grandfather, who lived to the age of 100, ate grains in some form every day. Bread, rolls, cold cereal or pie(his fav). He worked outside (physically) every day until a stroke at age 99. He enjoyed three meals per day. No snacks. He ate an apple in some form nearly every day, that he grew on his farm. And he loved pickled herring. He loved his family, his ranch, and had a relationship with God. Sometimes, I think we complicate our health and wellness.
Also - indeed - most of these statements/pieces of information that these influencers flood out with are never backed up, or the science is dismissed outright, and typically the arguments boil down to ad hominem, random attacks on people they disagree with. I've actually experienced a personal barrage attack from someone I have had a friendly relationship with, cascades of furious nonsense - all of it stuff I've heard from these "influencer" types - because she was convinced that advocating a "vegan diet" (which she never defined)was unethical and potentially harmful for many people. (I am an ethical vegan but became plant-based first after learning about a lot of the medical science after my MS diagnosis, and I later got the eCornell nutrition certification, so I have a lot of academic background... this woman 100% not interested in a cool-headed conversation about facts, even pulled out the "I don't care what the science says, studies are designed badly" or something...) Anyway, rant over - again, you guys are so gratifying to listen to.

It is annoying when stores replace a naturally gluten free item with a junk food. For example, replacing whole corn tortillas with Udi's tortillas.

How can a person find a reputable doctor who is able to assess a person who might have gluten intolerance? Is there any support group?
People are generally unhealthy, and understandably looking for a reason. Something becomes a scapegoat.
