BEST CARROT CAKE

This may be the best carrot cake you've ever made! Filled with spices, fruit, nuts, carrots, and THE most fluffy and decadent cream cheese frosting! This cake won't disappoint, and it's easy to make. :)
For the cake you'll need:
2 sticks of butter
1 c brown sugar
1 T vanilla (it's better with REAL vanilla)
4 eggs
2 t cinnamon
2 t allspice
1 t ginger
1/2 t nutmeg
1/2 cloves
1 c all purpose flour
1 t baking powder
1-1/4 t baking soda
1/2 t salt
2-1/2 c carrots
1 c pecans
1 c raisins
1/2 c dried cherries
For the frosting you'll need:
1-1/2 packages of cream cheese
2 sticks of butter
3 c powdered sugar
The trick to the fluffy cake is to whip the butter and sugar together on high for 3-4 minutes. It's the same trick for the fluffy frosting, whip the butter and cream cheese on high for 3 minutes before adding the powdered sugar.
