The food at the Night Market is insanely good b/c due to the high amount of traffic and people in Taiwan the food industry in super fierce! Those who are successful as Night Market vendors are typically those who will pursue opening their own restaurant as rents are extremely high and few restaurants will make it to their end of their rental lease.

Lady threw in an egg into it and then souped it up with some type of bread/naan or something similar to a soft taco. Threw some grounded spice on it. Man I tell you that was probably the best thing I ate in Taiwan. Had like 3 of those in 2 minutes. I saw some people literally buying bags of these things. Stomach destroyed me later but was totally worth it. Would have to ask my wife what it was again.
