Gozinaki/Traditional Georgian Confection with Honey and Walnuts

  • Gozinaki is a traditional Georgian confection, made with Walnuts and honey. Usually made for New Year's celebration.
    GOZINAKI RECIPE
    INGREDIENTS:
    250 g (2 cups) walnuts
    100 g honey
    2 tbsp sugar
    METHOD:
    Cut walnuts into small pieces and slightly roast them on dry skillet.
    In a small saucepan add honey and on medium heat heat it up.
    Add sugar and mix.
    Cook for about 7 minutes until thicken.
    Add chopped walnuts and mix well.
    Brush unflavored oil on cutting board and pour Gozinaki mixture.
    Shape quickly with rolling pin and butter knife into rectangular shape.
    Cut into small pieces while warm.
    Set aside to set.
    After being set, transfer onto a platter and enjoy!
    You can make this sweet treat with peanuts, hazelnuts, pumpkin seeds or sunflower seeds.

    This is. Georgian sweet cooky- dish created only in country GEORGIA from times immemorial. ...But mistake is that 1) noone cooks Gozinaki with sugar in Georgia,, honey anyway has its sweetness itself , 2) the Georgians use the wood desk.instead of glass over, 3 ) Georgians don't use any oil against sticking of Gozinaki on the cover ,first they springe with the cold water making the wet desk and then you put consistent of Gozinaki on the wood wet desk , 4) Georgians never use pumpkin seeds or any other fruit additions or even nuts because you have to.cook exact Georgian Gozinaki and not something else ...And at the end : it has to be very creespy and not such flexible as double gum
