How to Butcher a Beef Chuck Primal (English)

Welcome to the Luis’ Butcher Shop UA-cam channel! My name is Moises Rios, Shop Owner & Combat Veteran. In this video I will be butchering a beef chuck primal. This is the table breaking method I learned in my younger years. I’ll share some of the knowledge I’ve gained throughout the years in dealing with Latino culture. Nearly all Latinos speak spanish, but the names they use for cuts of beef are different. The hope I have for this video is to introduce you to different cuts of beef & encourage you to try something new.

Assuming I cannot talk to a butcher and must trust package labels in Supermarkets, How can I make sure I am buying chuck ribs since the term short ribs includes chuck ribs and many others? By seeing yours the answer seems obvious "They look big and flat and square like these" but that may not always get me to these ribs.
