Your right but the law is law, no one wants to test the boundaries of of what a court considers legal and not... Especially if your profession is on the line!
Health code is not law, two separate issues. No gloves necessary if the food is to be cooked, once cooked or food served raw needs a barrier. No testing or pushing limits, its clearly stated, easy for a restauranteur to follow and helps deliver safe food.
I just don't eat shrimp at all. They look disgusting to me, my family eats them all the time. They just look like sea roaches to me, but just wanted to see how they do this. All you that eat this are brave :) lol
i use to be squeamish like some of you folks out there. but i come to learn and seen videos of animals hunting other animals out in the animal kingdom and i would say this is more quicker and cleaner for a kill rather than being torn apart while still alive and being eating alive. those animals can live through the whole process and still be alive after the predator is done eating them and they sit there suffering until they die

I have been catching and eating them for decades. One thing stands out, if you toss shells in garbage disposal you will clog it. Wonder what happens when the shell progresses through a human? Often eat the tails fresh on the grounds when catching them, never tried the heads. So saying it is a fact I have never (except one time in Japan where the head of a herring like fish brought me to a halt. Very very bitter although the body of the fish was delicious) met any kind of sea food I didn't like.
Very rough skills, home made amateur cooking can be better than that. Deep frying only heads is fine, but did it wrong way, and obviously overcooked shrimp meat.
