Chef. Chef. Tip from a Southerner: Always preheat your muffin tin (with a tsp of oil in each cup) and then put in your batter. Gives you a nice crusty edge.

Zuhzuhzombie I always preheated my pans when using the cast iron pans for corn sticks or a cast iron skillet, but I have not tried preheating the thin aluminum cup pans. Also being a Southerner, I was delighted to see that Chef John doesn't turn his corn bread into cake by adding a bunch of sugar like the crazy Yankees I now live among.
@@LandNfan I was in maryland and ordered hush puppies... they were sweeter than corndogs! (Their crab was to die for, but I'd rather die than eat their hush puppies lol)

rneustel Dungeness grab beats blue crab alll day every day. Coming from someone who lived 30 minutes from the gulf my whole life and crabbed every weekend at my grandfathers beach house. Blue crab is good but dungeness is just another level!

LMAO -- Push it real good. HAHAHAHA. this looks so good. I wanna try hushpuppy mix and heat oil in the pan before scooping mix in like making cornbread (does anybody else pour cornbread batter into a hot iron skillet with oil?).
This is like Tamale bites that I make. Instead of crab I stuff the corn muffins with shredded beef, roasted red pepper, jalapeno, and a little tomato or enchilada sauce. Topped with cheddar and that's it. This is my own invention but I'd love to see you show everyone how it's done.
