It looks like white birch (Betula pendula). You can see the bark for a second in the beginning and the close-up shots at the end show the typical grain of birch wood.
Well i would like to know what knife he is using to hog out that spoon. Its cutting across the grain like butter but could be his mad sharpening skills...what angle do you have on there man? And bam! Why didnt i think of using a hatchet to hog out the shape first....seems a no brainer...and man what a hook knife! Custom made? I wonder if pfiel/swiss made makes one like that
